02 - Whisk together soy sauce, oyster sauce, hoisin sauce, water, brown sugar, and cornstarch in a small bowl until smooth and set aside.
03 - Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Add the marinated beef and stir fry for 1-2 minutes until browned. Remove beef from the pan and set aside.
04 - Add the remaining 1 tablespoon oil to the pan. Stir fry the garlic and ginger for 30 seconds until fragrant.
05 - Add carrots and snow peas to the pan. Stir fry for 2-3 minutes until vegetables are just tender but still crisp.

07 - Remove from heat immediately. Garnish with sliced spring onions and serve with steamed rice or noodles.

# Expert Tips:

01 -
  • It comes together faster than ordering takeout.
  • The sauce creates a glossy finish that makes everything taste restaurant quality.
02 -
  • Do not overcrowd the pan or the beef will steam instead of sear.
  • Have all ingredients prepped before you turn on the stove because stir frying happens fast.
03 -
  • Dry the beef slightly before marinating to help it sear better.
  • Substitute hoisin with extra sugar if you do not have it.
