# Directions:

01 - Combine chicken strips with 1 tbsp olive oil, lemon juice, oregano, cumin, paprika, salt, and black pepper. Mix thoroughly and let marinate for 10 minutes while preparing vegetables.
02 - Heat remaining 1 tbsp olive oil in a large skillet or wok over medium-high heat.
03 - Add marinated chicken and cook for 4 to 5 minutes, stirring frequently, until cooked through and lightly browned. Remove chicken from pan and set aside.
04 - In the same pan, add onion and bell peppers. Stir fry for 3 minutes until just tender.
05 - Add zucchini and garlic; continue stir frying for another 2 minutes.
06 - Return chicken to the pan, add cherry tomatoes, and cook for 2 more minutes until tomatoes soften.
07 - Add spinach and toss until wilted, about 1 minute. Remove from heat, sprinkle with crumbled feta and parsley, and serve immediately with lemon wedges.
