Greek Yogurt Carrot Cake (Printable)

Moist carrot cake with Greek yogurt, warm spices, and grated carrots. Easy one-bowl preparation.

# What You Need:

→ Dry Ingredients

01 - 1 1/2 cups all-purpose flour
02 - 1 teaspoon baking powder
03 - 1/2 teaspoon baking soda
04 - 1/2 teaspoon salt
05 - 1 1/2 teaspoons ground cinnamon
06 - 1/4 teaspoon ground nutmeg

→ Wet Ingredients

07 - 2 large eggs
08 - 1/2 cup neutral oil (canola or sunflower)
09 - 3/4 cup packed light brown sugar
10 - 1 cup plain Greek yogurt, whole milk recommended
11 - 1 teaspoon vanilla extract

→ Add-ins

12 - 2 cups grated carrots, approximately 3 medium carrots
13 - 1/2 cup chopped walnuts or pecans, optional
14 - 1/2 cup raisins, optional

# Directions:

01 - Preheat your oven to 350°F. Grease an 8-inch round or square cake pan thoroughly, then line with parchment paper for easy removal.
02 - In a large mixing bowl, whisk together the eggs, neutral oil, brown sugar, Greek yogurt, and vanilla extract. Continue whisking until the mixture is completely smooth and uniform.
03 - Add the flour, baking powder, baking soda, salt, cinnamon, and nutmeg directly into the wet mixture. Using a spatula, gently fold the ingredients together until just combined. Take care not to overmix as this can toughen the crumb.
04 - Fold in the grated carrots until evenly distributed throughout the batter. If using walnuts, pecans, or raisins, add them now and fold gently to incorporate.
05 - Pour the batter into your prepared cake pan. Use an offset spatula or the back of a spoon to smooth the top evenly.
06 - Place the pan in the center of the oven and bake for 35 to 40 minutes. Check for doneness by inserting a toothpick into the center of the cake. It's ready when the toothpick comes out clean or with just a few moist crumbs attached.
07 - Allow the cake to rest in the pan for 10 minutes to set. Then carefully transfer it to a wire cooling rack to cool completely before slicing into servings.

# Expert Tips:

01 -
  • The Greek yogurt creates an incredibly tender crumb while keeping the cake moist for days
  • Everything comes together in one bowl, meaning less cleanup and more time enjoying
  • The spices develop beautifully, making this taste like it came from a bakery
02 -
  • Overmixing creates a tough cake so stop as soon as the flour disappears
  • Room temperature ingredients incorporate more easily and create a uniform texture
  • The cake continues cooking slightly while cooling so do not overbake
03 -
  • Grate your carrots by hand rather than using food processed shreds for better texture
  • Whole milk Greek yogurt yields the richest result but low fat works too
