01 - Toast bread slices in toaster or grill pan until golden brown and crispy, approximately 2-3 minutes.
02 - Halve avocado, remove pit, and scoop flesh into small bowl. Add lemon juice, sea salt, black pepper, and chives. Mash with fork until creamy but retaining slight texture.
03 - Heat nonstick skillet over medium heat for 1 minute. Crack eggs into pan and cook for 2-3 minutes for runny yolks or 4-5 minutes for firm yolks. Slide spatula under eggs to release from pan.
04 - Divide mashed avocado evenly between toasted slices, spreading to cover surface completely. Top each toast with one cooked egg.
05 - Sprinkle crumbled feta cheese and red pepper flakes over eggs. Grind additional black pepper on top. Serve immediately while warm.
