# Expert Tips:

01 -
  • They get seriously crispy without any deep frying or complicated equipment.
  • The garlic toasts perfectly in the oven and coats every fry with flavor.
  • You can prep them ahead and just pop them in when youre ready to eat.
02 -
  • Drying the potatoes completely is the difference between crispy and soggy, I learned that the hard way.
  • Don't add the garlic at the beginning or it will burn and turn bitter before the fries are done.
  • Flipping them halfway through is not optional if you want even color and crunch on all sides.
03 -
  • Cut your fries as evenly as possible so they all finish at the same time.
  • Use a light hand with the oil, too much will make them limp instead of crispy.
  • Fresh herbs at the end make all the difference, dried just doesn't hit the same.
