01 - In a medium bowl, combine mayonnaise, minced garlic, Sriracha (start with 1 tablespoon), lemon juice, smoked paprika, salt, and several grinds of black pepper.
02 - Whisk vigorously until all ingredients are fully incorporated and mixture is smooth and creamy.
03 - Taste the aioli and adjust seasoning, salt, or spice level by adding more Sriracha as desired.
04 - Cover bowl and refrigerate for at least 30 minutes to allow flavors to develop and meld together.
05 - Serve chilled as a dipping sauce for fries, spread for sandwiches and burgers, or drizzle over grilled meats and vegetables.
